First, let me say that I got this recipe from Irvin Lin. Here is the link. He does an excellent job of breaking this recipe down and has great photos. It made it really easy for me to reproduce. I decided to add walnuts to the filling, just because I thought it would be interesting.
I haven’t made too many breads like this, so it was fun to do something so different. I also decided to try to make a video of the process, so here it is!
What did I learn from this?
Well, first of all, the apricots I used were pretty tart. I should have used more sugar in the filling to compensate for this. The end result was that my filling was quite tangy. The walnuts had a nice texture, but could have also used some additional sweetness. I ended up making a sweet vanilla glaze to drizzle over the fruit to give it a little more sweetness.
I also learned that I really enjoyed the construction of this type of bread. Rolling, cutting and braiding the dough was really fun and was really beautiful!
I’d like to figure out how to reproduce this without the egg, so that it could be vegan. I used non-dairy milk, so that piece is already taken care of.
Making the video was also fun. I think I will do more of that!
